Their irrigated olive groves are located in Jaén, on the slopes of Sierra Morena, at an altitude of 400 meters. In this privileged area, this extra virgin olive oil is born, where the harvesting, processing, and storage of the EVOO are carried out with great care and dedication.

To obtain this impressive olive juice, it is essential to minimize the time between the harvesting of the olives and their arrival at the mill. In this case, Oro Bailén completes this process in just 2 hours, then proceeds with cold extraction at 21°C to ensure that all the properties of the Extra Virgin remain intact.

Oro Bailén offers us two EVOO varieties: the Picual variety, with a bright green hue, intense fruitiness, and complex aromas of tomato plant, fig tree, and grass; and the Arbequina variety, golden in color with a delicate flavor of banana and almond.

“With brick manufacturing as their main activity, the Gálvez González family decided back in 2002 that, given the state of the Extra Virgin Olive Oil market, there was a small opportunity to develop a new line of ultra-premium oils — not only as a different product but as a new way of understanding this olive juice that, for so many centuries, has been a part of Mediterranean culture and a hallmark of our culinary identity.

With these principles, they embarked on a new and exciting project in which, in addition to being olive oil producers (growers), they integrated the different phases of the production process to help them reach the final consumer — from producer to packer and marketer — guaranteeing perfect traceability throughout the process, which begins with the formation of the fruit in the field and ends with the sale of the final product and the transmission of this new philosophy of extra virgin olive oil to the consumer.”
