100% extra virgin olive oil from the Picual and Arbequina varieties
Their irrigated olive trees are located in Jaén, on the slopes of Sierra Morena, at an altitude of 400 metres. This extra virgin olive oil is produced in this privileged area, where the collection, processing and storage of the EVOO is carried out with great care and attention.
To obtain this impressive olive juice, it is essential to shorten the period of time between the olive being picked and its arrival at the mill. In this case, Oro Bailén does it in just 2 hours, then extracts the oil, always cold, at 21°C, to ensure that all the properties of the Extra Virgin are preserved intact.
Oro Bailén offers us two varieties of EVOO, the Picual variety , with a bright greenish hue, intense fruitiness and complex aromas of tomato, fig or grass, and the Arbequina variety , with a golden hue and a delicate flavour of banana and almond.

«With brick making as their main activity, the Gálvez Gónzalez family decided back in 2002 that given the current state of the Extra Virgin Olive Oil market, there was a small gap in the market where they could develop a new line of production of top quality oils, where not only would there be room for a different product but also for a new way of understanding this olive juice that for so many centuries has been part of Mediterranean culture and a hallmark of our culinary activity.
With these premises, they are undertaking a new and exciting project, in which, in addition to being olive oil producers (harvesters), they would integrate the different phases of the production process that would help them reach the final consumer, from producer, through to bottler and marketer, guaranteeing perfect traceability throughout the entire process, which begins with the formation of the fruit in the field and ends with the sale of the final product and transmission of the new philosophy of extra virgin olive oil to the consumer.
