Details

Verde Esmeralda extra virgin Premium edition, 100% Picual. From Úbeda, Jaén.

This extra virgin olive oil shows us an aroma of fresh grass, tomato and artichoke that reminds us of the extensive olive groves of the upper basin of the Guadalquivir. Transmitting peace and awakening a unique feeling. First night of harvest. This year's harvest was carried out at the end of October. As October is a month of high daytime temperatures, which in many cases reach up to 30 degrees, the harvest is carried out at night, thus ensuring that the temperature from the time the olive is obtained, to the time its elixir is obtained, is permanently below 20 degrees. The harvested olives go through a destemming process, in which those that do not meet the established requirements are discarded.

SCENT:

Very intense fruity green olive aroma and very complex, with green notes of apple, grass, stems, alloza and tomato.

FLAVOR:

On the palate it is sweet, moderately bitter and somewhat spicy. Very balanced.

ACIDITY: 0.12.

Obtaining Process:

Obtaining the best Extra Virgin Olive Oil is more than a technique; it is a spiritual ritual. Without thermal fluctuations and at the precise temperature from the moment the olive is obtained to the extraction of its Elixir. Verde Esmeralda collects its olives from a selection of the best trees from among more than 78,000 olive trees. To this end, strict control is established over all the cultural practices for the cultivation of the olive tree. From the moment it begins to flower, through the setting of the fruit and all its development in the tree, all the variables that affect the quality of the fruit are controlled.

JUAN ANTONIO CANDON ANGULO

Gracias.
Saludos.

Buenas tardes Juan Antonio
