If an area has been dedicated to olive cultivation for generations, the fields are already part of its ecosystem and landscape. Consuming olive oil produced in areas where it is a traditional crop helps to maintain native flora and fauna and a human community that lives off olive groves. It is true that in this case we would not be consuming organic olive oil, but it is important not to forget that behind every olive tree and every olive mill, there are people like us and we all want our ways of life and our customs to survive.
