MO Molina Olivares is a tribute to the invisible work of the olive grove. The Ortal family has been cultivating their olive trees for generations in the province of Jaén and, as a result of their centuries-old tradition, they have decided to package their own 100% Picual early harvest olive oil in a simple and elegant way.
The MO Premium bottle is black and minimalist. In a way, it tells us just enough to make way for what is important; the oil makes the presentation with its aromas of the countryside and grass, and with a very characteristic personality in the mouth, due to its progressive medium bitterness that never stops you from enjoying it.
The history of MO Premium
Indeed, it could be said that at MO Premium what is not seen is much more important than what is seen. Starting with the name. Molina Olivares are not the surnames of Jesús and his sister, who decided to finish the production process of their own oil by creating the brand. They are the surnames of their grandmother, Francisca Molina Olivares.
This EVOO is much more than a tribute to its origins: it is also a recognition of those women who carried out the invisible work around cultivation and harvesting, carrying the weight of the house and the bills.
This invisible but not imperceptible work is still what makes the difference in an oil like MO Premium. Before the MO Molina Olivares oils reach the bottle, meticulous work has been carried out that combines tradition, technical innovation and respect for the olive tree.
MO Molina Olivares, prioritizing respect for oil
Many olive oil tastings can give contradictory results. Thus, the humility latent in MO Molina Olivares that wants to give way to the virtues of its product also has an important component of perfectionism and attention to detail. For this reason, they counted on the advice of Anuncia Carpio, one of the most renowned olive mill masters in the world, or they monitor the humidity and the degree of organic matter in the soil of their farms to ensure that the harvest is done at the right time.
Premium MO Collection
We are already used to seeing how the farmer who decides to bottle his own product is often the spearhead of innovation in the sector. Not necessarily with technological advances but with technical advances such as those implemented at MO Molina Olivares. Without going any further, the black of the bottle conveys something in which the Ortal family was a pioneer: night harvesting to respect the cold chain.
The night and the meticulous harvesting process give the collection of MO Premium a ritualistic air.
The harvest begins long before the picking. The farms where MO Premium is extracted are clayey-silty but with a relative geological diversity that means that an olive tree of the same type and age can produce a different oil depending on its location.
For this reason, before the harvest, tests are carried out using the Abencor system to determine which soil is producing the best quality fruit. These small clues in the form of samples are already an omen of good results.
On the night of the harvest, the pickers mark the healthiest and most vigorous trees with white ribbons. These ribbons allow them to be easily distinguished during the night.
These trees are the chosen ones but at the same time they are the ones that will select the olives at their optimum point, because the harvesters will comb them and only the fruits that fall are collected to produce MO Premium, guaranteeing proper ripening.
