All Saints' Day is approaching, and in many homes in Catalonia and the Balearic Islands, the tradition of making All Saints' Fritters is still followed. A delicious pastry recipe in which frying in extra virgin olive oil is a fundamental step. Want to know how to make them? Here’s the recipe!
The ingredients you need to prepare All Saints' Fritters are:
- 200 g of potatoes and sweet potatoes
- 100 g of sugar
- 250 g of flour
- 2 eggs
- 25–50 g of yeast and of course… Extra Virgin Olive Oil!
Preparation:
1. First, peel the potatoes and sweet potatoes and place them in a pot to boil.
2. Once cooked, mash them and mix with the eggs (previously beaten), sugar, and yeast.
3. When you have a homogeneous dough, add a teaspoon of extra virgin olive oil and the flour, and mix everything again.
4. Voilà! The dough for our fritters is ready. Cover it with a cloth and let it rest for at least 1 hour.
5. After 60 minutes, shape the fritters. Make sure to coat your hands well with flour or olive oil so the dough does not stick. The shape should resemble a small ring, round with a hole in the center.
6. Once shaped, fry them in extra virgin olive oil. In this case, at Origen Oliva, we recommend one of our latest releases: Mediterranean Elixir oil. A smooth oil perfect for this type of recipe.
7. Finally, once all the fritters are fried, drain them and sprinkle a little sugar on top as the finishing touch.
