All Saints' Day is approaching, and in many homes in Catalonia and the Balearic Islands the tradition of cooking All Saints' Day fritters is still being followed. An exquisite pastry recipe in which frying in extra virgin olive oil is a fundamental part. Do you want to know how to make them? Here is the recipe!
The ingredients you need to prepare All Saints' Day fritters are:
- 200 gr. of potatoes and sweet potato
- 100 gr. of sugar
- 250 gr. of flour
- 2 eggs
- 25 or 50 gr. yeast and of course… extra virgin olive oil!
Preparation:
1. The first thing we have to do to prepare this delicious dessert is peel the potatoes and sweet potato and put them in a pot to boil.
2. Once they are cooked, the next step is to crush them and mix them with the eggs (previously beaten), sugar and yeast.
3. When we have a homogeneous dough, we will add a teaspoon of extra virgin olive oil and the flour, and we will mix everything again.
4. And that's it! Now we have the dough to make our fritters ready. The next step is to cover it with a cloth and let it rest for at least 1 hour.
5. After 60 minutes, we will start to shape our fritters. It is important to coat our hands well with flour or olive oil, so that the dough does not stick to our fingers. The shape should be similar to that of a doughnut. Round and with a hole in the middle.
6. Once the shape is made, it is time to fry them. Ideally, do so in extra virgin olive oil. In this case, at OrigenOliva we recommend one of our latest innovations: Mediterranean Elixir oil. A mild oil perfect for this type of recipe.
7. As a final step, once all the fritters are fried, we will drain them and sprinkle a little sugar on top as a finishing touch.
