The land of the Soto Marañón olive oil estate is located near the Alcaudete train station in Jaén . The estate is called El Portillo. This property is distinguished by its rocky soil composed of gypsum. This material has numerous unique and beneficial effects on the soil and the development of the olive grove . The gypsum rock on the estate has a leaflet-like architecture (similar to slate) that allows the plants to explore the depths in search of water.

Another interesting feature of sedimentary gypsum rocks like those in our olive grove is their ability to form a well-structured soil thanks to the calcium and sulphate that give it high-quality properties and allow for unique cultivation .
