Faithful to its commitment to the production of the highest quality extra virgin olive oil and to the protection and care of the environment and the olive grove, Castillo de Canena launches its first “Biodynamic” extra virgin olive oil, certified by the International Association of Biodynamic Agriculture with the DEMETER seal.
This extra virgin olive oil is made through complete integration and harmony with the ecosystem, with the natural habitat and with the cosmos, enriching the concept of organic farming.
A delicacy that has just obtained a Gold medal in the latest edition of the international EcoTrama competition, which rewards the best organic and biodynamic extra virgin olive oils from around the world.
With a limited production of 20,000 units, it is presented in an earth-colored bottle with a sand texture, thus recalling the origins of agriculture. And silk-screened in white and green with the constellation of the moon and stars, representing the cosmic forces and those of the earth itself.
Beyond the ecological:
Biodynamicity involves not only the total exclusion of chemically synthesized fertilizers or pesticides in agricultural exploitation, but also an absolute transformation of the environment in which it is produced.
Biodynamic agriculture is a firm step forward from the organic farming method that is based on the harmonization between the different forces that govern nature: atmospheric phenomena, seasons, position of the constellations in the cosmos, lunar cycles, seeking balance between the soil, the trees, the animals and the man. From the incorporation of sheep to the farm, the creation of own fertilizers through composting, the enrichment of the vegetal cover through the installation of honeycombs, biological control, the foliar use of silica (ground quartz) in instead of copper and the application of different biodynamic preparations, are some of the elements that are added to the specific elements of organic farming and that Castillo de Canena incorporates.
In mouth:
Vegetable notes of herbs and vegetables predominate in this fresh, lively and expressive oil. The olive leaf, lettuce and artichoke appear in the foreground. Next, the fresh fruits, the tomato plant and a sweet touch of green banana and ripe apple. The bitter and spicy are well integrated; and some astringency reminds us of artichoke, thistle or persimmon. Persistent in the mouth.
Color: Intense green.
Suggestions for use: Salad dressings, tomato soup, gazpacho, cheeses, ham and all types of grilled meats.
High content of polyphenols (760 ppm of the 436 are biophenols). High percentage of antioxidants.
