Unique in its organoleptic characteristics, this EVOO is well-balanced and harmonious. Produced in limited quantities, it is crafted by fine-tuning the process parameters for each variety used, achieving the desired sensory nuances in the blend.
The mill, located in Pegalajar, Jaén, has evolved over time. Situated at an altitude between 490 and 900 meters, it covers 5,000 square meters and is equipped with the latest technology for bottling and preservation, ensuring a product of the highest quality.
COLOR: Intense green, filtered.
AROMA: Medium fruity green olive with notes of tomato plant, apple, banana peel, green almond, freshly cut grass, and artichoke.
FLAVOR: Complex and sweet. Characterized by a soft bitterness and delicate spiciness that extends throughout the palate. Balanced, refined, and complex, with excellent presence.
