Production:
The process begins in the olive groves, separating olives from the tree from those on the ground, selecting the fruit from the start to ensure one of the finest Picual olive oils.
The olives are milled at the mill located in the Sierra Mágina region, northeast of Jaén, a declared Natural Park. The groves here feature highly developed trees. At times, the altitude of the olive trees exceeds 1,000 meters, so most are considered mountain groves, benefiting from the unique microclimate.
Harvesting begins when the olives reach optimal maturity, usually in November. Once picked from the tree (never mixed with ground olives), they are transported to the mill and undergo strict cleaning. Next, the olives are washed with clean spring water from Cánava, then crushed using a hammer mill to break all cells containing the oil. The resulting paste is transferred to a mixer to form a compact, homogeneous mass.
This paste is subjected to a special two-phase centrifugation to separate the oily must (olive oil) from other components. The must, at a maximum temperature of 22°C, is washed to remove impurities. After this step, the oil is transferred to storage tanks.
In the cellar, the oil rests to reach optimal maturity. The constant cellar temperature ensures this oil becomes one of the finest natural products for consumption, coming straight from the heart of Sierra Mágina.
