TASTING NOTE

Visual Phase

Intense green color, oily, full-bodied, and very shiny.

Scent Phase

Freshness with high intensity of green fruitiness. The leaf is clearly perceived in combination with notes of freshly cut grass, while fruity descriptors such as banana or fig appear, highlighting aromas of tomato plant and mint.

Taste Phase

Thanks to its silky texture, the entry into the mouth is pleasant. The attributes detected in the nose are appreciated again, including others like artichoke and green wheat, with a fresh, fruity, and green flavor. The bitterness and spiciness are firmly present to a good extent, with medium intensity, without overpowering the olive fruitiness, highlighting the hint of mint and chlorophyll that envelops the entire oral cavity and invades the retro-nasal passage, leaving a long aftertaste and giving astringency at the end.

Sensory Aspects

Oil balanced in fruitiness, aromas, spiciness, and bitterness, while complex due to the variety of nuances and harmonious because of their balance, making it an elegant oil overall.
