The Yo, Verde picual variety olive trees are found on their farm located in an enclave of great scenic beauty: Los Cerros de Úbeda.
Yo, Verde, was born as the result of a long history of four generations in which tradition and olive roots are linked to disciplines such as medicine and pharmacy in several of its promoters.
When the time comes for early harvesting in the month of October, the fruit, still green, has to be in the oil mill before twelve in the morning to avoid high temperatures. Afterwards, it is transported to the factory where the grinding of the olive is carried out a few hours after being collected, controlling the entire beating process so that the stability of the product is adequate and thus preserves the beneficial properties for health.
Obtained naturally, without additives and cold extracted at an average temperature of 22 ºC.
A complete flavor experience to awaken the senses with this early harvest olive oil, characteristic for its bright green color. An intensely fruity green olive, with notes of freshly cut grass, fig tree and banana peel, over which green almond stands out. It is a voluminous oil, very balanced, with medium spiciness and bitterness, which leaves a harmonious sensation of freshness with high persistence.
Its high content of natural antioxidants, provitamins, polyphenols and accentuated nutritional contributions stands out.
The analysis of the Yo, Verde oil carried out by The Fat Institute (IG), which is a Research Center of the State Agency for the Higher Council of Scientific Research (CSIC) framed in the Area of Food Science and Technology, certifies that In Yo, Verde, there is a higher concentration of total polyphenols, more than 67%, than that indicated for extra virgin olive oils (EVOO), including those of the Picual variety, which are estimated at 400 mg/kg, according to studies carried out. . Therefore, it is an olive oil that is especially healthy for our body.
