Making oil is easy, but producing an excellent Aceite de Oliva Virgen Extra is not. Pago de Espejo begins the harvest campaign from late October to early November, when the fruit is still unripe (“en envero”) and provides us with all the exceptional essences of the fruit.

The Pago de Espejo estate is enclosed within the same boundaries, allowing for perfect control over the entire olive harvesting process.

Harvested at an early stage and produced with absolute finesse, the Aceite de Oliva Virgen Extra is the result of a meticulous process of collection and extraction, where it is milled within hours of picking, naturally decanted, and finally filtered, thus preserving its incomparable properties.
