At 400 metres above sea level, on the slopes of Sierra Morena, lies Villanueva de la Reina, in Jaén. Since the 19th century, Casa del Agua and Oro Bailén have been producing their fruity and subtle olive oils.
The harvest, carried out in November, is semi-manual, since the felling of the olive is done with specific machinery, consisting of vibrating the trunk, so that the fruit falls off earlier and in greater quantity, aided by manual shaking, followed by extensive labor for its collection in bales and subsequent loading onto trailers that will quickly transport the olives to the oil mill.
As it is an oil harvested in November, it cannot be considered as either an early harvest or a mature harvest. It is therefore in the middle ground, which is highly appreciated by olive oil lovers.
Olive oil that stands out for its medium-intensity fruitiness, with a similar intensity in both green and ripe nuances at their optimum point, reminiscent of fruits such as tomatoes or almonds. On the palate it has a sweet entrance, with a delicate and light bitterness, accompanied at the end by a touch of spiciness, both in perfect balance, very harmonious and with a medium-low intensity.
Intense fruity, with a medium bitterness and a medium spiciness.
