Full of aromas, this Arbequina EVOO is characterized by medium intensity, with fruity notes taking the lead over bitterness and pungency. It evokes tomato leaves, freshly cut grass, apple, artichoke, and almond. On tasting, its structure and silkiness stand out, making it truly distinctive. Only with excellent olives and impeccable production can such an explosion of aromas be achieved. The oil is cold-extracted within 6 hours of harvest.
The Casas de Hualdo mill, surrounded by its olive groves, is built within the estate itself. Olives, picked directly from the tree, arrive still alive at the mill. They are treated with care and milled immediately, preventing any fermentation. Every stage, from reception to bottling, uses the latest technology and is carefully designed to extract the best from the olive, unlike other methods that prioritize exhausting the olive paste.
The Tagus River basin, as it passes through the province of Toledo, presents a typical terraced landscape that rises from the lowlands to the hills of the sierra. Carpio del Tajo, with gently rolling terrain up to 600 m in altitude, hosts our olive groves. The climate is harsh, with cold winters and extremely hot, dry summers, which naturally helps control diseases and pests.
In autumn, temperatures drop significantly, although they do not reach freezing, ensuring ideal conditions at harvest time.
Appearance: Pouring the oil reveals a golden liquid with mint-green reflections. Clean and filtered, it is a beautiful oil whose color reflects its natural character.
Aroma: The dominant sensations are green and fresh. Tomato leaf, freshly cut grass, almond, apple, and artichoke aromas stand out, creating a privileged olfactory experience for those who discover them.
Palate: On the palate, it is sweet, fruity, and very expressive. Tomato leaf and fresh grass notes prevail. Bitterness and pungency do not mask the fruity notes detected by the nose. It is fragrant, balanced, and a true aromatic explosion.
Perfectly pairs with a wide range of dishes where aromatic intensity is desired. Its scent enhances salads, salmon, asparagus purée, or couscous. Ideal for a classic salmorejo, Galician-style octopus, or grilled cuttlefish.
