Full of aromas, this Arbequina EVOO is characterized by its medium intensity, with a dominance of fruity notes, above the bitterness and spiciness. It reminds us of tomato leaves, freshly cut grass, apple, artichoke and also almond. When tasting it we appreciate its structure and smoothness that make it really different. It is a harmonious, fragrant and balanced oil. Only with excellent olives and impeccable preparation can such an explosive result of aromas be obtained. It is extracted cold within 6 hours from collection.
The Casas de Hualdo oil mill, surrounded by its olive groves, has been built within the estate itself. The olive, picked directly from the tree, arrives still alive at the oil mill. There it is treated with dedication to be ground at the moment, avoiding any fermentation. All processes, from reception to packaging, have the most modern technology and have been carefully designed to extract the best from the olive, unlike other models in which the exhaustion of the olive paste took precedence.
The basin of the Tagus River, as it passes through the province of Toledo, draws us a stepped and very typical aesthetic that on its southern slope climbs from the plains to the rañas of the mountains. Carpio del Tajo. Our olive groves are located on a slightly undulating topography that reaches up to 600 m in altitude. The climate is harsh, combining cold winters with extremely hot dry summers, which favors the natural control of diseases and pests.
In autumn, temperatures drop considerably, although without freezing, guaranteeing unbeatable conditions at the time of harvesting.
VISUAL ANALYSIS
Appearance: When pouring the contents of the bottle, we discover a golden liquid with mint green reflections. Clean and filtered, it is a beautiful oil whose color shows its nature.
OLFACTORY ANALYSIS
Aromas: On the nose, the most dominant sensations are green and refreshing. Aromas of tomato, freshly cut grass, almond, apple, and artichoke. Some evocations that make those who discover them feel privileged.
TASTE ANALYSIS
Palate: The taste is sweet, fruity and very suggestive. The sensations of tomato plants and fresh grass dominate. The bitter and spicy do not mask the fruity notes that are captured by the sense of smell. It is an oil, fragrant and balanced. A true aromatic explosion.
PAIRINGS
It can combine perfectly with a multitude of dishes where greater aromatic intensity is preferred. Its smell enhances any type of salad, salmon, asparagus puree or couscous. Ideal for a good salmorejo, Galician-style octopus or grilled cuttlefish.
