The harvest is semi-manual, since the felling of the olive is done with specific machinery, consisting of vibrating the trunk, so that the fruit is released earlier and in greater quantity, aided by manual harvesting, following with a large workforce for collecting them in bales and subsequently loading them into trailers that will transport the olives quickly to the oil mill.

The oil is left to decant naturally for 15 days, after which all the oil is filtered. It is stored in tanks inerted with nitrogen, under a controlled temperature in the same winery between 18 - 20 degrees, ready for direct packaging, remaining unchanged throughout the year.

A medium fruity fresh olive, with green aromas of herbs and green wheat interspersed between the fruity notes characteristic of the Arbequino; The almond, apple and ripe banana stand out. Its passage through the mouth is progressive, with a soft and delicate entry, a very light bitter aftertaste and a more notable presence of spiciness. It is harmonious and the aftertaste is almondy.
