Why is proper EVOO storage important?

Olive oil is a natural product, free from preservatives or colorants. If not stored correctly, it can oxidize and quickly lose its properties when exposed to light, heat, and air.

1. Protect from light

Light is EVOO’s main enemy: it alters its flavor and aroma, discolors it, and reduces polyphenol and vitamin E levels.

2. Avoid excess air

Air accelerates the oil’s decomposition. Always keep the container tightly closed to prevent continuous oxygen exposure.

3. Keep away from smoke and odors

EVOO quickly absorbs kitchen smoke and aromas, which can alter its taste. Keep it away from cooking areas.

4. Control the temperature

The ideal storage temperature is between 16 °C and 22 °C. Below this range, it may solidify due to oleic acid content, but this is not a problem: just let it return to room temperature before use.

We recommend storing it in a pantry or cupboard, away from light, temperature changes, and always well sealed.
