What does new harvest EVOO mean?

New harvest olive oil comes from olives harvested and milled during the most recent olive oil season. In Spain, the 2026/2027 season officially began on 1 October 2026, although the exact harvest date and arrival of each product depend on the variety, region, weather and producer's decisions.

Two related terms should not be confused:

  • New harvest: the oil belongs to the season that has just begun.
  • Early harvest: the olives were picked before reaching full ripeness to obtain a more intense sensory profile and prioritise fruit quality over yield.

Many of the season's first oils are also early harvest oils, but this is not necessarily true of every new harvest EVOO. The producer's information and harvest date are the best references.

Why try the 2026/2027 new harvest?

Opening a bottle from the new harvest lets you discover olive oil at a particularly expressive stage. This does not mean that a well-stored EVOO from the previous season, still within its best-before date, is no longer excellent. Freshly produced oils simply offer a different experience closely connected to the start of the season.

  • Vibrant aromas: the variety's characteristic aromas are often especially clear soon after production.
  • A seasonal experience: every harvest reflects the conditions in the olive grove and decisions made during harvesting and milling.
  • More opportunities to compare: it is an ideal time to taste different varieties, intensities and producing regions.
  • A timely gourmet gift: the first bottles of the season have a special appeal for olive oil lovers.

What does new harvest olive oil taste like?

There is no single “new harvest” flavour. The profile changes according to the variety, the fruit's ripeness, its environment and the production process. Early harvest oils often have a more pronounced green fruitiness, with notes reminiscent of freshly cut grass, olive leaf, tomato plant, green almond, apple or aromatic herbs.

Bitterness and pungency may also be present. When clean and balanced, they are positive attributes of extra virgin olive oil, not defects. Their intensity varies considerably: some oils are delicate and mild, while others are robust, persistent and full of character.

The profile of the Picual variety

Picual often appeals to those looking for character, green fruitiness and recognisable bitterness and pungency, although the precise result always depends on the individual oil. Explore our collection of Picual EVOO.

Does colour indicate quality?

No. An oil may have green or golden hues, but colour alone does not determine its quality. Professional sensory panels therefore use glasses designed to prevent appearance from influencing the assessment. Pay greater attention to the category, origin, harvest date, storage and producer information.

How to choose your new harvest EVOO

  1. Look for the season or harvest date. It should identify the oil as belonging to the 2026/2027 season.
  2. Check the category. Choose extra virgin olive oil. According to the International Olive Council, virgin olive oils are obtained from the fruit solely by mechanical or other physical means that do not alter the oil.
  3. Choose your preferred intensity. Look for more delicate profiles for mild dishes; for toast, tomatoes, cheese or finishing stews, you may prefer a more intense EVOO.
  4. Consider the packaging. Dark glass, tins and other formats that shield the oil from light help to preserve it.
  5. Buy a sensible quantity. Choose a size you can use comfortably after opening. If your household uses EVOO daily, explore our large-format olive oils.

How to enjoy it at the table

To appreciate a new harvest EVOO for the first time, taste a small amount on its own or with a neutral food. Then use it in dishes where its character will not be hidden.

  • Toast with tomato and a few flakes of salt.
  • Salads, roasted vegetables and blended soups.
  • Pulses, soups and stews, added just before serving.
  • Cheese, preserves, carpaccio and fish.
  • Natural yoghurt, fruit or dark chocolate for an interesting contrast.

A simple tasting tip: pour a little oil into a glass, warm it gently with your hand, smell it and take a small sip. This will help you recognise its fruitiness, bitterness, pungency and persistence.

How to preserve its qualities

Extra virgin olive oil begins to evolve as soon as it is produced. To retain its aromas and flavours for longer, protect it from its main enemies: light, heat, air and strong odours.

  • Store it in a cool, dry and dark place.
  • Keep it away from the oven, hob and windows.
  • Close the container tightly after every use.
  • Do not transfer it to open or transparent containers for long periods.
  • Follow the best-before date and enjoy it regularly once opened.

The 2026/2027 season in Spain

Spain's 2026/2027 olive oil season began on 1 October. The first forecast published by the Spanish Ministry of Agriculture, Fisheries and Food estimates national production at 1,602,596 tonnes, 23% higher than the previous season. This is an initial forecast and remains subject to the progress of the harvest and final data.

This figure provides context for the sector as a whole, but it does not predict the sensory profile or availability of any particular oil. Every bottle is shaped by its variety, grove, harvest time, production and storage. You can read the Ministry's official first forecast for the 2026/2027 season.

Frequently asked questions about the new harvest

When is the 2026/2027 new harvest olive oil released?

The first products appear at the beginning of the season, but they do not all arrive at once. Timing varies according to the variety, producing region, olive ripeness and each mill's schedule.

Are “new harvest” and “first day of harvest” the same?

No. “New harvest” identifies the latest season. “First day of harvest” is generally reserved for oils produced with olives picked on a specific opening day and is usually presented as a highly limited edition.

Is new harvest EVOO always more intense?

Not necessarily. Early harvest oils often show green aromas and a very vibrant character, but intensity depends on the variety, ripeness and production process. New harvest oils can also have a mild, balanced profile.

Can you cook with new harvest olive oil?

Yes. EVOO can be used both raw and in cooking. Even so, many people reserve limited-edition or especially aromatic oils for finishing dishes, where their nuances can be appreciated more clearly.

How long does it remain at its best?

Always check the best-before date shown on the container. Its evolution also depends on the packaging, opening and storage. Keeping it tightly closed and away from light and heat helps to protect its qualities.
