Mergaoliva, a brand that produces its products continuing a family tradition while staying attentive to the latest market trends and the demands of an increasingly knowledgeable consumer.

The company

It is a small family business where the current managers continue the work started by their parents, the founders, pursuing business development.

In their mill, located in the heart of Jaén province, specifically in the town of Lahiguera, they honor the ancestral tradition of extracting olive juice that has been carried out in these lands for thousands of years.

They declare themselves lovers of olive oil and its culture, promoting the health benefits it provides. In addition to producing high-quality Extra Virgin Olive Oils, they aim to disseminate the essence of the cultural heritage of olive oil, ensuring that the harvest and milling of the fruit are done under optimal conditions to guarantee the quality of the EVOO obtained.

After many years managing their olive groves, they felt the need to extract the oil from their fruit with special care and carefully select it according to its different stages of ripeness, with the utmost rigor in milling, in order to offer excellent oils with distinct organoleptic nuances.

Working methodology

To achieve these objectives, they place special emphasis on soil care, the essential base for correct cultivation, aiming to be as respectful as possible to the natural environment while preventing and treating possible deficiencies or pests affecting the olive grove.

They also rigorously monitor and care for the fruit until it reaches maturity, carrying out a harvest that is respectful of the tree and the fruit.

Regarding the transport and milling of olives, these tasks are performed immediately after harvesting to prevent the fruit from losing its natural qualities. It is important to note that milling is carried out exclusively using mechanical means and cold extraction.

Mergaoliva also pays careful attention to the storage, monitoring, and filtering of EVOO, which takes place in a climate-controlled cellar until bottling.

The products

Mergaoliva produces three types of Extra Virgin Olive Oil, distinguished by the ripeness of the fruit from which they are extracted, under the names Alba, Cenit, and Érebo. These names were adopted from the beginning of the Mergaoliva brand, drawing a parallel between the olive’s ripening and stages of the day: Alba (dawn), Cenit (noon), and Érebo (evening).

In the same order as these times of day, the olive ripens in stages: green, veraison (purple), and black (black skin and white flesh).

First Day of Harvest

This is an Early Extra Virgin Olive Oil bottled in 500 ml glass, made from selected green olives harvested in the first days of October in Mergaoliva estates in the Guadalquivir valley.

Tasting note: Intense fruity. Green, fresh, and pleasant sensations with notes of fig tree, tomato plant, banana peel, and almond.

Very fluid in the mouth, complex, balanced, and harmonious, rich in floral nuances.

Available in Picual variety.

Alba

Extra Virgin Olive Oil from green olives.

Tasting note: Very intense fruity, with varied green sensations, notes of fig tree, tomato plant, banana peel, and almond. Smooth, complex, balanced, and harmonious in the mouth, with floral nuances.

Suitable for raw consumption. Available in Picual variety.

Cenit

Extra Virgin Olive Oil from veraison (partially ripened) olives.

Tasting note: Medium fruity and very balanced. Green aromas and nuances of leaf, tomato, and banana, with fresh and pleasant sensations in the aftertaste.

Suitable for raw consumption or as a dressing. Available in Picual varieties.

Érebo

Extra Virgin Olive Oil obtained from black-skinned olives with white flesh.

Tasting note: Smooth and balanced, sweet on the palate, with almond fruity and hints of tomato plant and kiwi.

Suitable for raw consumption, and ideal as a dressing for confit or fried dishes. Available in Picual variety.
