The olive tree that produces the hojiblanca olive stands out at first sight due to the lighter colour of its leaves. And if it is loaded with fruit, we will immediately notice that it is resistant to falling off.
To make matters worse, it is one of the varieties most affected by vecería (alternative yields from year to year) and when the fruits are ground, its oil yield is not very high compared to the leading varieties such as Picual and Arbequina. Why would we grow a difficult tree without much yield for our admired farmers?

Characteristics of the hojiblanca olive
Its characteristic rounded shape and light green colour that tends to darken makes the fruit well known as a table olive.
The Hojiblanca olive is one of the most characteristic olives of our lands, especially in the central area of Andalusia (Cordoba, Malaga, Seville and Granada), and is the third most cultivated olive (behind the Picual and the Arbequina). It comes from Lucena, Cordoba, which is why it is also known as Lucentino.

As we always say, there are no universal rules, but many Hojiblanca oils tend to have a slightly bitter taste, with a slightly more intense spicy touch. They tend to have a sweeter entrance, which some oils maintain to give way to almond sensations while others move on to the characteristic bitterness of green fruit, with nuances for all tastes.
Hojiblanca olive oil pairing
As with the Arbequina olive, the oil from the Hojiblanca olive is excellent in baking and confectionery due to its sweet aroma. The most intense Hojiblanca can take salads with leafy vegetables and legumes to another level thanks to its intense aroma, which can also complement vinaigrettes and raw sauces.
