Organic Extra Virgin Olive Oil (BIO/Organic)

Explore our selection of organic aceite de oliva virgen extra, made from olives sourced from certified organic farming. We work with producers who respect biodiversity and avoid synthetic phytosanitary products, offering AOVE with maximum purity, traceability, and varietal expression.

What does “organic” mean in AOVE?

  • Certified cultivation: olive grove management without herbicides or synthetic pesticides and independent process control.
  • Traceability and respect for the environment: living soils, pollinators, and sustainable practices.
  • Careful sensory profile: clean fruitiness, balanced bitterness and pungency, with great aromatic clarity.

Harvesting and process

  • We prioritize early harvest batches (usually from early October to late November, depending on the climate) and rapid milling to preserve aromas.
  • Cold extraction and protected bottling (dark glass or tin) to maintain organoleptic qualities.

How to enjoy your organic AOVE

  • Ideal raw: on toast, salads, vegetables, carpaccios, and cheeses.
  • In cooking, use it to finish dishes or in mild sauces; if you are looking for high-yield oil for intensive frying, visit large format.
  • If you prefer a greener and more aromatic profile, also explore our early harvest collection.

Formats and packaging

  • Bottles (usually 500 ml) for raw consumption and tastings.
  • Opaque tins for optimal preservation and easy dosing.
  • Availability of larger formats depending on producer and campaign.

Freshness and continuous rotation

At Origen Oliva, we work with constant stock rotation to serve freshly bottled oils or recent batches. This better preserves the organoleptic qualities (fruitiness, bitterness, and pungency) and delivers organic AOVE at its peak moment.

Storage tips

  • Store the oil in a cool, dark place, away from heat sources.
  • Close the container tightly after each use to minimize oxidation.
  • Prefer dark glass or tin to protect it from light.
