Discover the 2025/2026 early harvest extra virgin olive oil (EVOO), made from green or turning olives harvested early between October and November. These oils are prized for their freshness, aromatic intensity, and balance, making them the perfect choice for using raw.

What does early harvest mean?

  • Early picking (October–November) of green or turning olives.
  • Immediate milling to preserve freshness and aromatic richness.
  • Cold extraction to maximize organoleptic qualities.
  • Lower yield but higher concentration of aromas and nuances.

How to enjoy early harvest EVOO

  • Ideal for raw use: on toast, salads, grilled vegetables, carpaccios, or cheeses.
  • In cooking, use it to enhance dishes or in delicate sauces; for prolonged frying, check our large format section.

Available varieties

For the 2025/2026 campaign, you can find both monovarietals and blends of exceptional quality. Click each variety to discover its nuances:

  • Picual: robust, notes of olive leaf and tomato, medium-high bitterness/pungency.
  • Frantoio: herbaceous, floral, with hints of green almond.
  • Arbequina: mild fruitiness with apple and almond notes.
  • Hojiblanca: fresh herbs, artichoke, and a light almond touch.
  • Royal: elegant, fragrant, and delicate.
  • Nevadillo Blanco: herbal, green tomato, and slight astringency.
  • Taggiasca: delicate, nutty, with sweet nuances.
  • Lucio: historic varietal, green and harmonious.
  • Carrasqueño: medium fruitiness, vegetal, with tomato notes.
  • Koroneiki: very intense, fresh grass, long persistence.
  • Arbosana: floral, fresh grass, smooth entry.
  • Cornezuelo: fig leaf, intense green, pronounced character.
  • Empeltre: nutty, gentle, silky mouthfeel.
  • Favolosa (FS-17): modern, clean, tomato leaf, very fresh.
  • Blend: combination of varieties for balance and complexity.
